A citrus fruit indigenous to Japan and Korea, yuzu has a beguiling flavour – between a sweet mandarin and a fragrant grapefruit. Bergamot is highly perfumed (it is traditionally used as the scenting oil in Earl Grey tea) and its zest adds a freshness to the rich cheesecake, balanced by the sweetness of the yuzu juice. You can buy yuzu juice and bergamots in Waitrose.
